happy sunday my friends! how was everyone’s weekend? mine was glorious and just what I needed — I feel like I’ve been very go go go these past few months, which I love and have no complaints about, but this was my first weekend in a while where I’ve had a *less* full schedule. I had lots of time at home to film new recipes for you (which are so good omg), organize and finish setting up my home and then doing some boring life errands. I cleaned out my car this weekend and why does it feel like…that is peak adulthood? maybe it’s because this is my first time ever having a car that’s fully my own, but damn I felt like a suburban mom of 3 while I was vacuuming out and wiping down my car lol. anyway it had to be done and now my car is sparkling clean (I also got a carwash, another peak adult task).
I went on an 8 mile run on saturday morning with my run club which was a challenge since I haven’t been running that much lately, but felt SO good. I’ve made some great friends at my run club so if you’re new to a city, I highly recommend finding a local run club to join. you get to exercise and be social at the same time, what could be better??? we ended the run at one of my favourite cafes and tell me why a cold fresh orange juice was literally the best thing I’ve ever tasted after an 8 mile run. like WOW that hit!
okay onto today’s recipe — I teased this caramelized banana affogato in my story the other day and y’all went crazy for it so even though I haven’t posted the video yet, I wanted to send the recipe out to you guys now. I’ve had “affogato” on my recipe list for a LONG time (like probably a year) but was trying to figure out some way to make it more fun and exciting, so after my banana bread latte recipe and the leftover syrup I had, the idea for a caramelized banana affogato came to me. we’ve got slices of golden brown, cinnamon-y caramelized banana, vanilla ice cream, espresso, whipped cream + our banana bread syrup from the latte!!! it’s SO worth making I promise (for the lattes and for this) but if you must, you could also use any caramel or chocolate syrup here and it would still be fab. I serve mine in these coupe glasses from Fable which I am obsessed with — I think they’re so chic for cocktails or desserts and they are thin but somehow unbreakable. they’re having a bundle sale on their site right now and you can get an extra discount with my code KULASKITCHEN! honestly I can’t wait to host another dinner party so I can serve these affogatos :) recipe below!
caramelized banana affogatos
1 banana, sliced
1 tbsp butter
1/4 tsp cinnamon
4 scoops (2 servings) of vanilla ice cream — I use and love this one
2 shots of espresso
fresh whipped cream — I just whipped a small container of heavy cream with vanilla bean paste
banana bread syrup — recipe here!
sea salt
heat a large skillet over medium and add the butter. once hot and melted, add your banana slices in a single layer and sprinkle with the cinnamon. let the banana slices cook on one side until golden brown, about 3-5 minutes, then carefully flip each slice and let cook on the other side for another 2-3 minutes. remove from the heat and set aside.
divide your ice cream between dessert bowls or coupe glasses, then top each with a few caramelized banana slices. pour the hot espresso overtop, then top with whipped cream, a drizzle of banana bread syrup and some sea salt. ENJOY!
