SoโฆIโve been horrible about writing this newsletter regularly. Which really shouldnโt be the case because I love getting to write out more words/thoughts than an Instagram caption warrants, and I love getting to connect with my fun lil tight knit community here (you). Iโm now pledging to write this newsletter every Sunday for the rest of the year. Since Iโve said that I actually have to do it now, with the exception of maybe one or two holiday weekends. I actually have a lot of fun content coming up now that itโs holiday/fall baking/cozy recipe season, so please hold me to this!
It is truly the least unique quality in the world to love fall, but guess what? I love fall. And Iโm assuming all of you do too. Although now that I live in LA, we havenโt exactly had fall weather here (not complaining but like I do miss the crispy air and colorful trees I wonโt lie). I did get to go to New York back in October and I just got back from a trip to Madrid, so I got to experience some DELIGHTFUL fall weather in both of those places and it really got me in the mood for layers and colder weather recipes.
With that, here are a few of my go-to delicious & nourishing fall recipes and treats!
COZY FALL RECIPES
Lasagna Soup with Gnocchi - I cannot believe it took me so long to make the viral lasagna soup. Mine is inspired by Moribyanโs recipe and I used gnocchi in place of the lasagna noodles, as well as the Sauz Hot Honey Marinara which is fantastic. This is my new fave fall meal!
Brown Butter Skillet Apple Crisp - I looooove an apple dessert in the fall, and the brown butter-oat crumble on top of this apple crisp makes it absolutely incredible.
Fall Breakfast Sandwiches - tbh I kinda forgot about these and now I WILL be making them next weekend. The combo of squash + eggs is unexpectedly great.
One Pot Gnocchi Alla Vodka - an easy, comforting one pot meal that combines two of my favorite things - gnocchi and a creamy (dairy free) vodka sauce.
Creamy Red Curry Chickpeas + Greens - I made this one pan meal a few weeks ago and it really hit. Itโs creamy, filling and flavorful, plus it only requires a few simple ingredients and 20 minutes to make.
Gluten Free Pumpkin Pancakes with Whipped Cinnamon Brown Butter - need I say more? These are ridiculously fluffy and perfectly spiced. The whipped brown butter is a must make.
Squash Mac โn Cheese - a classic that Iโve been making for over 10 years. Iโm releasing a new spin on it in a few weeks so stay tuned!
Tahini Chocolate Chip Cookie Skillet - this gooey cookie skillet is elevated by the rich, nutty tahini and itโs heavenly with vanilla ice cream. Also vegan + gluten free!
