hi hi! hope you all had a fabulous weekend. I went for a few runs, had a movie night with some friends + filmed a bunch of new recipes for you which I can’t wait to share. I’m really into a series lately — I feel like this is my year of the series?! we’re currently doing this bowl meal series, which I’m loving because these are truly 75% of the meals I typically make and eat. I also just started a coffee series because I’m obsessed with making fun coffees now that I (finally) have a proper espresso machine (but shoutout to Aeropress which got me through many many years). I also secretly have a dream of opening up a gorg little coffee shop, but I’m probably not going to because a) I don’t want to run a food or beverage establishment and b) they basically lose money lol (or so I’ve heard). so this is my way of running the at-home coffee shop of my dreams and I have some DIVINE latte recipes coming your way soon.
anyway! back to this bowl — it’s #2 in my series and we’re making a crispy harissa chickpea + halloumi bowl. I actually can’t believe I just bought halloumi for the first time (I think). it’s SO GOOD?! it’s perfectly salty and flavorful and fries up into a crispy charred situation that is ideal for topping a bowl. like is there anything better than fried cheese…? today we’re making our bowl vegetarian with crispy air fried chickpeas, the halloumi, roasted cauliflower + sweet potatoes, greens and the most amazing harissa tahini dressing. I made this last weekend and saved the leftover components in my fridge, then enjoyed the best week of lunches I’ve had in a while. you should def make it :)
