homemade tru fru 🍓🍫
AKA chocolate + PB covered frozen raspberries!
Happy Monday! I hope you all had a great weekend (long weekend for my American friends). I went to LACMA jazz on Friday night with my friend Carlita, which I’ve been wanting to do for a while now, and it was lovely — you can bring your own food + wine and you essentially just vibe, drink and listen to jazz on the grass (what’s not to love?)
Saturday night was a birthday at our favourite bar, and Sunday my friends and I rented a pool on Swimply and hosted a little Memorial Day pool party. If you don’t have a pool, I can confirm that renting one for a few hours and inviting friends is a fabulous way to spend a summer Sunday.
I’ve also been in the midst of decorating my new house and I’m giddy to show you all. Impatience is unfortunately one of my worse qualities and I am extremely eager to just get it done, but I know setting up and decorating a new house takes time so I keep reminding myself of that. I’d rather find pieces that are perfect for the space than rush everything to have it finished. But it’s really coming together and I am so happy with it so far!!!
For today’s recipe, we are making homemade Tru Fru, which I believe to be the ideal warmer weather treat. In case you’re unfamiliar, Tru Fru is a brand that makes chocolate covered frozen fruit pieces which is, in my opinion, a truly genius product (simple but unique). My sister in law introduced me to these a few months ago and I was hooked, but at $8 a bag, I can’t justify purchasing them on a regular basis when they’re quite easy to make at home. The frozen raspberries they make are covered in white and dark chocolate, but I decided to go rogue and do chocolate + peanut butter since that is my favourite combo of all time. These little bites are perfectly sweet + salty and I’d suggest keeping a batch in your freezer all summer for a healthy dessert that you can have at the ready. Hope you love them!
frozen chocolate peanut butter raspberries
1 pint fresh raspberries
⅓ cup natural peanut butter
⅔ cup dark chocolate chips
2 tbsp coconut oil, divided
Flakey sea salt
Grab some toothpicks and place 2 raspberries on each one (going through the sides of the raspberries, not the centers, so they stay on!)
In a small bowl, melt together your peanut butter and 1 tbsp coconut oil (you can use the microwave or a double boiler). Mix until smooth.
Take a toothpick of raspberries and gently roll it in the melted peanut butter to coat on all sides, shaking off excess, then place on a small baking sheet lined with parchment. Repeat with remaining raspberries and place in the freezer for 15-20 minutes to firm up. Note: if some of the raspberries are a bit mushy or start to break, just place them in clusters rather than on toothpicks!
In another small bowl, melt together your chocolate chips and remaining 1 tbsp coconut oil and whisk until smooth. Take your frozen peanut butter raspberries and roll each one in melted chocolate, coating on all sides and shaking off any excess. Repeat with remaining raspberries, then sprinkle with flakey sea salt and place back on the parchment to set for at least 1 hour.
Store in the freezer. These are best when you take them out of the freezer for 5-10 minutes to thaw slightly before enjoying!
