guys…I am BLOWN AWAY by the response to my peach brown butter cornmeal upside down cake from a couple weeks ago. so many of you joined my community here on substack because of that recipe and I’m so happy to have you!!! it has been making my MONTH seeing so many of you make the recipe and tag me in your stunning pics, so keep ‘em coming!

Wednesdays are when I send out this newsletter, which is for my paid substack subscribers. not to be too ~sappy~, but in a world of content overload and the expectation to be receiving free content at all times, I am genuinely so grateful to those of you who contribute to my work in this way. I have been putting out free recipes almost weekly for the past 6+ years so it means a lot to have my work supported. the social media and content landscape is ever changing and it can be tough to navigate, but regardless of whether you are a free or paid subscriber, you are supporting my work and I truly love having this community here. I will of course continue to send out my free Sunday newsletter and lots of free recipes on my instagram as always!

due to the popularity of the original recipe, I decided to do another riff on my brown butter upside down cornmeal cake. it occurred to me that cherries and cornmeal are randomly an iconic combo, so I decided to use fresh summer cherries in this version. and….it is INSANELY GOOD. like not to play favourites, but it honestly might be even better than the original. I brought some to my friend to taste taste for me on sunday and we are both obsessed.

with the new version of this cake, I also took the opportunity to review some of the feedback/issues a few of you were having with the cake. here are the changes I’ve made:

  • added gram measurements to the flours to ensure they are exact

  • upped the baking time slightly to ensure the cake bakes all the way through

  • added more visual cues to the recipe to make sure it’s successful!

if you follow the recipe with these changes, it should turn out perfect. and because it is a corn cake, it is naturally dense and gets this amazingly crispy golden crust, so it’s hard to over bake or mess up. I hope you love it as much as I do! can’t wait to see all of your summer upside down cakes :)
